Cardamom Oat Porridge with Honeyed Pears
Serves 4Prep 10m · Cook 20mBreakfast
My grandmother kept cardamom pods in a tin above the stove, and winter mornings in her kitchen smelled like this pot. She would hand me a wooden spoon and tell me the porridge could hear whether I was stirring with patience or not. I still crush the pods with the back of her old spoon, and I still stir slowly.
Ingredients
- 2 cups rolled oats
- 3 cups whole milk
- 1 cup water
- 6 green cardamom pods, lightly crushed
- 1/4 teaspoon fine salt
- 2 ripe but firm pears, peeled and sliced
- 2 tablespoons unsalted butter
- 3 tablespoons honey, plus more to serve
- 1/4 cup toasted chopped walnuts
- Pinch of ground cinnamon
Instructions
- Combine the milk, water, cardamom pods, and salt in a medium saucepan and bring to a gentle simmer over medium heat.
- Stir in the oats, reduce the heat to low, and cook, stirring often, until thick and creamy, 12 to 15 minutes.
- Meanwhile, melt the butter in a skillet over medium heat. Add the pear slices and cook until golden at the edges, about 4 minutes per side.
- Drizzle the honey over the pears and let it bubble for 1 minute, turning the slices to glaze them.
- Fish the cardamom pods out of the porridge and divide it among bowls.
- Top with the honeyed pears, walnuts, a pinch of cinnamon, and a little extra honey.
